Roast Duck
Ingredients
- 1 1/2 kg duck
- salt
- 2 level spoon flour
- Pepper
Preparation
- Prepare the washed duck with salt.
- Lay the duck turned aroand on a grate above a wet frying-pan.
- Push the duck in a hot-air oven.
- Bake it 1 3/4 hours at 200° C.
- Prick from time to time below the wings and in the legs while the duck bakes.
- Remove the fat in the frying-pan after half an hour in the oven.
- Add hot water when the rest in the frying-pan is getting brown.
- Baste the duck from time to time with the rest in the fraing-pan.
- Replace evaporated liquid by water.
- Spread the duck with cold salted water and lower the heat 10 minutes before the end of the baking time.
- Warm the done duck.
- Boil the rest with water and sieve this.
- Stir the flour with 2 spoons cold water and boil the sieved rest with it.
- Add salt and pepper to the sauce.
