Chicken Fricassee
Ingredients
- 1 kg chicken
- salt
- 1 green vergetables for making soup
- 1 onion
- 1 bay-leaf
- 1 clove
- 25 g butter
- 30 g flour
- 175 g asparagus
- 150 g mushrooms
- 4 spoon white wine
- A little bit of lemon juice
- 1 teaspoon sugar
- 2 egg yolk
- 4 spoons cream
- pepper
- worcester sauce
Preparation
- Add the washed chicken to 1 1/2 l of boiling salt water.
- Add the vegetables for making soup.
- Give the bay-leaf and the clove to the onion and add it to the rest.
- Boil the chicken for 1 hour.
- Remove the chicken from the rest.
- Sieve the rest and leave 1/2 l for later.
- Remove the meat from the chicken.
- Heat the butter in a pot.
- Add the flour and heat it until it is yellow.
- Add the sieved rest.
- Boil it for 5 minutes.
- Add the maet, the asparagus and the mushrooms.
- Boil it for a short time.
- Add the wine, 1 spoon of lemon juice and the sugar.
- Stir the egg yolk with the cream and give it to the rest.
- Add salt, pepper, worcester sauce and lemon juice.
