Beef olive
Ingredients for 4 persons
- 4 beef olive
- Salt and pepper
- 2 onions
- 100 g bacon fat
- 4 little pickled gherkin
- 3 soup-spoon peanut oil
- 30 g cornflour

Preparation
- Wash and lay down flat the beef meat.
- Sprinkle salt and pepper.
- Peel and cut the onions into pieces.
- Cut the bacon fat in pieces of 3 cm x 5 mm.
- Cut each pickled gherkin into 4 pieces.
- Roll the beef olives with the pieces of onions, bacon fat and pickled Gherkin.
- Heat the oil and fry the beef olives.
- Mix it with 1/2 l water.
- Boil it for 2 hours at low heat (or for 25 minutes in a pressure-cooker).
- Pour away 1/4 to 1/2 of the liquid in a small pot with cornflour and boil it.
- Add as many herbs as you like.
Refinement
- As a supplement you can use potatoes and red cabbage.
- Spread mustard on the beef olives after adding salt and pepper.
