Zucchini Soup
Ingredients
- 4 little zucchinis, ca. 1/2 kg
- 150 g smoked trout
- 2 shallots
- 1 clove of garlic
- 20 g butter
- 2 spoon oil
- 1/2 l bouillion
- 1/4 l white wine
- salt
- white pepper
- 1/8 l cream
Preparation
- Wash the zucchinis.
- Cut the zucchinis and the trout to small pieces.
- Cut the shallots and the clove of garlic to cubes.
- Heat the butter and 1 spoon oil in a pot.
- Add the shallots and the clove of garlic.
- Add half of the zcchinis and 2/3 of the trout.
- Add the bouillion and the wine.
- Add salt and pepper.
- Boil it covered for 15 to 20 minutes.
- Put 1 spoon of oil in a frying pan.
- Put the rest of the zucchinis in the hot frying pan.
- Beat the cream until stiff.
- Mash the zucchini soup.
- Heat it once again and add the cream.
- Scatter it on the plate with cubes of zucchini and trout.
Refinement
- Use other smoked fish instead of trout.
